Rice Cake

Ingredients

  • 125 g butter
  • 250 g caster sugar
  • 3 each eggs
  • 250 g ground rice
  • 1 each lemon, grated zest

Directions

Cream the butter and sugar. Beat in the eggs then the rice and zest. Bake 1 1/4 to 1 1/2 hours at 180℃ in an 18cm cake tin lined with parchment.
