# Rice Cake
### Ingredients
* 125 g butter
* 250 g caster sugar
* 3 each eggs
* 250 g ground rice
* 1 each lemon, grated zest
### Directions
Cream the butter and sugar. Beat in the eggs then the rice and zest. Bake
1 1/4 to 1 1/2 hours at 180℃ in an 18cm cake tin lined with parchment.
