Apple Sauce Cake

Ingredients

  • 340g cooking apples
  • 115g butter, softened
  • 225g caster sugar
  • 225g plain flour
  • 1 teaspoon ground mixed spice
  • 1 teaspoon bicarbonade of soda
  • 170g dried apricots, chopped

Directions

Heat oven to 180C, grease and line a 17cm cake tin.

Wash but do not peel the apples, core them and cut into chunks. Put in a saucepan with a tablespoon of water, cover and cook over a low heat, stirring occasionally, until pulpy. Push through a sieve and set aside to cool.

Cream the butter and sugar together until pale and fluffy. Add the cooled apple puree and all the other ingredients and mix well. Turn into the prepared tin.

Bake in the cetnre of the over for about 1 1/2 hours, or until a skewer comes out clean. Ten minutes before the end of baking, sprinkle with 1 tablespoon of demerara sugar.
