# Earl Grey Tea Sorbet

Recipe yields 8 portions
|
|
|
|
### Ingredients
|
|
* 900 milliliters cold water
|
|
* 250 milliliters caster sugar
|
|
* 6 pieces Earl Grey tea bags
|
|
* 1 pieces lime, juice
|
|
* 1 pieces lemon, juice
|
|
|
|
### Directions
|
|
|
|
Bring water and sugar slowly to the boil, stirring until dissolved, then raise the heat and boil rapidly for 5 minutes. Remove from the heat, add the Earl Grey tea bags, and leave them to infuse for 10 minutes. Add the lime and lemon juices then strain the liquor and cool.
|
|
|
|
Churn in an ice-cream machine to a soft ice texture then transfer to a container and freeze for up to 2 weeks. Allow to soften slightly at room temperature before serving.
