# Sweet Pastry

### Ingredients
|
|
* 350 grams plain flour
|
|
* 150 grams icing sugar
|
|
* 250 grams butter, diced
|
|
* 250 grams butter, ice-cold
|
|
* 1 pieces lemon, zest
|
|
* 1.5 pieces eggs
|
|
|
|
### Directions
|
|
|
|
Put all ingredients in a food processor with blade and blend until they come together as a smooth dough. Knead lightly for a few seconds then wrap in cling film and chill for at least 30 minutes before rolling.
|
|
|
|
Blind bake at 180C (170C fan) for 15-20 minutes, remove beans and bake for a further 5 minutes. Glaze with beaten egg while still hot.
