Thyme and feta lamb
Recipe yields 4 servings
Ingredients
- 12 small lamb loin chops
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- salt
- black pepper, freshly ground
- 2 cloves garlic, crushed
- 2 tablespoons young thyme leaves
- 100 grams feta cheese
- mint leaves, chopped
- extra virgin olive oil
Directions
Put the lamb chops in a small dish. Squeeze the lemon juice into a small bowl and add the olive oil, some salt and freshly fground black pepper, and the garlic. Chop the thyme leaves and stir half of them into the oil and lemon. Pour this marinade over the lamb and set aside for a good hour.
Crumble the feta cheese into a small bowl and add the mint and remaining thyme leaves.
Grill the lamb, either on a charcoal grill or a ridged cast-iron pan. When cooked, transfer to warm plates and sprinkle over the feta cheese and herbs, then add a single glug of olive oil.
