Soft Brown Rolls

Recipe yields 64 dinner rolls

Ingredients

  • 1.5 kilograms strong white bread flour
  • 750 grams granary flour
  • 60 grams salt
  • 1 litres milk
  • 500 milliliters water
  • 250 grams butter
  • 250 grams beef dripping
  • 65 grams fresh yeast
  • 120 grams butter, melted

Directions

Melt butter and dripping in the milk; add water to cool, then whisk in the yeast. Add to dry ingredients and knead for 10 minutes. Prove, then shape into 60g balls, prove again, and bake at 190°C for 12-15 minutes.

Brush with melted butter and return to the oven for 2 minutes.
