Potatoes Nicoise
Ingredients
- 150 grams potatoes, peeled
- 0.25 pieces Green pepper, finely chopped
- 0.25 pieces Red pepper, finely chopped
- 1 small onion, finely chopped
- 1 cloves garlic, finely chopped
- 2 pieces ripe red tomatoes, skinned and chopped
- 2 tablespoons tinned chopped tomatoes
- 1 teaspoons fresh herbs, chopped
- 2 pieces black olives, chopped
- salt
- black pepper, fresh ground
Directions
Chop the potatoes into 5mm cubes and dry thoroughly on kitchen paper. Heat the oil in a heavy-based frying pan and add the potato cubes and pepper. Fry over a medium heat for 5 minutes, then add the onion and garlic. Cook for a further 5-10 minutes, until the vegetables are tender and golden.
Add the tomatoes and herbs and turn the heat to high. Cook for a further 2 minutes, until the liquid from the tomatoes has evaporated. Season with salt and pepper and sprinkle over the chopped olives.
