Parsnip and Apple Soup
Ingredients
- 25 grams butter
- 1 medium onion, diced
- 2 medium parsnips, peeled and diced
- 1 medium cooking apple, peeled and diced
- 568 milliliters vegetable stock
- 2 tablespoons parsley, chopped
- 0.5 teaspoons mixed herbs
- 568 milliliters milk
- salt
- peper
Directions
Melt butter and cook vegetables and apple, without colouring, until onion is transparent. Add stock and herbs, bring to the boil, then reduce heat, cover and simmer for 30 minutes. Add milk and blend until smooth. Reheat to serving temperature and season to taste.
