Mushroom soup

Recipe yields 4 servings

Ingredients

  • 55 grams butter
  • 340 grams flat mushrooms, chopped
  • 1 tablespoons fresh parsley, chopped
  • 0.5 cloves garlic, crushed
  • 2 slices bread, crumbled
  • 860 milliliters white stock
  • nutmeg, freshly grated
  • salt
  • black pepper, freshly ground
  • 75 milliliters single cream

Directions

Melt the butter in a large, heavy saucepan. Add the mushrooms and most of the parsley. Cook over a low heat, stirring, until soft. Add the garlic and the bread. Stir until the bread and mushrooms are well combined, then add the stock, nutmeg and salt and plenty of pepper to taste. Bring to simmering point then cook slowly for 10 minutes.

Liquidise the soup then add the cream and reheat. Sprinkle over the remaining parsley to serve.
