Langoustine Oil
Ingredients
- Langoustine heads and tails, brains removed
- 0.5 pieces large onion, roughly chopped
- 2 pieces carrots, peeled
- 2 pieces carrots, roughly chopped
- leek tops, roughly chopped
- 2 pieces star anise
- coriander seeds
- tomato purée
- olive oil
Directions
Combine shells, vegetables and spices with a little olive oil. Roast until coloured and sweet smelling. Mix in tomato purée and roast for another 2-3 minutes. Add more olive oil and leave to infuse overnight at room temperature. Strain.
