Honeycomb
Ingredients
- 165 grams caster sugar
- 25 milliliters honey
- 60 grams glucose syrup
- 30 milliliters water
- 7 grams bicarbonate of soda
Directions
Line a baking tray with parchment. Place sugar, honey, glucose syrup and water in a large, heavy-based saucepan. Cook over medium heat until caramel in colour. Add the bicarbonate of soda and quickly whisk (do not overwhisk). Pour into lined tray and leave 15 minutes to set. Store in a cool, dry place.
