Garibaldi

Ingredients

  • 100 grams butter, at room temperature
  • 100 grams icing sugar
  • 100 grams egg whites
  • 100 grams plain flour, sifted
  • 200 grams currants

Directions

Cream butter and sugar until light and fluffy. Beat in the egg whites. Stir in flour then currants.

Bake at 185°C for 6-8 minutes, until set and light brown in colour.
