Garam masala

Ingredients

  • 1.5 teaspoons coriander seeds
  • 2 teaspoons cumin seeds
  • 1 teaspoons fennel seeds
  • 1.25 teaspoons black peppercorns
  • 5 centimetres cinnamon stick
  • 6 pieces cloves
  • 5 pieces cardamon pods, seeds from
  • 0.25 teaspoons fenugreek seeds

Directions

Heat the spices in a dry heavy frying pan over a low heat. shaking the pan from time to time, until they are lightly roasted. Cool, then grind to a fine powder.
