Ingredients
- 2.3 kilograms rib roast of beef
- dry English mustard
- salt
- black pepper, freshly ground
Directions
Weigh the beef to calculate the cooking time. Preheat the oven to 220C/Gas 7.
Place the meat in a roasting pan and sprinkle with salt, a little mustard, and plenty of black pepper.
Roast for 20 minutes. Turn the oven down to 160C/Gas 3 and roast for 20 minutes per 450g for medium meat, or 10-15 minutes for very rare.
