Eliza Acton's Wine Sauce
Ingredients
- 0.5 lemon Lemon zest, thinly pared
- 45 grams sugar
- 150 milliliters water
- 30 grams butter
- 0.5 teaspoons flour
- 225 milliliters sherry
- 225 milliliters Madeira
- 225 milliliters white wine
Directions
Simmer the lemon zest and sugar in the water for 15 minutes. Mash together the butter and flour, add to the strained lemon water, and cook over a gentle heat until it thickens. Stir in the wine, reheat to just below boiling point and serve immediately.
