Earl Grey Tea Sorbet
Recipe yields 8 portions
Ingredients
- 900 milliliters cold water
- 250 milliliters caster sugar
- 6 pieces Earl Grey tea bags
- 1 pieces lime, juice
- 1 pieces lemon, juice
Directions
Bring water and sugar slowly to the boil, stirring until dissolved, then raise the heat and boil rapidly for 5 minutes. Remove from the heat, add the Earl Grey tea bags, and leave them to infuse for 10 minutes. Add the lime and lemon juices then strain the liquor and cool.
Churn in an ice-cream machine to a soft ice texture then transfer to a container and freeze for up to 2 weeks. Allow to soften slightly at room temperature before serving.
