Earl Grey Jelly
Ingredients
- 400 milliliters water
- 250 grams sugar
- 50 grams glucose syrup
- 2 pieces Lemons
- 3 pieces Earl Grey tea bags
- 6 pieces gelatine leaves
Directions
Soak the gelatine leaves in cold water.
Place water, sugar, glucose syrup and lemon juice and zest in a pan, heat gently until sugar has dissolved, then bring to a boil and simmer for 3 minutes. Remove from the heat, add the tea bags, and allow to infuse for 10 minutes. Strain. Squeeze out the water from the gelatine leaves and whisk into the warm syrup to dissolve.
