Doughnuts

Ingredients

  • 900 grams bread flour
  • salt
  • 180 milliliters water
  • 280 milliliters milk
  • 115 grams butter
  • 115 grams sugar
  • 30 grams fresh yeast
  • 2 pieces eggs

Directions

Place milk, water, butter, and sugar in a saucepan and heat gently until butter has melted. Crumble in yeast and whisk to dissolve.

Sift dry ingredients into rotary mixer with dough hook. Add eggs and yeasted liquid. Knead 10 minutes. Prove 1 hour in a warm place.

Shape into 45g balls, and prove again. Chill until required.

Deep fry 6 minutes at 170C, turning over halfway through cooking.
