# Apple Sauce Cake

### Ingredients
|
||
|
|
||
|
* 340g cooking apples
|
||
|
* 115g butter, softened
|
||
|
* 225g caster sugar
|
||
|
* 225g plain flour
|
||
|
* 1 teaspoon ground mixed spice
|
||
|
* 1 teaspoon bicarbonade of soda
|
||
|
* 170g dried apricots, chopped
|
||
|
|
||
|
### Directions

|
|
||
|
Heat oven to 180C, grease and line a 17cm cake tin.
|
||
|
|
||
|
Wash but do not peel the apples, core them and cut into chunks. Put in a
|
||
|
saucepan with a tablespoon of water, cover and cook over a low heat, stirring
|
||
|
occasionally, until pulpy. Push through a sieve and set aside to cool.
|
||
|
|
||
|
Cream the butter and sugar together until pale and fluffy. Add the cooled apple
|
||
|
puree and all the other ingredients and mix well. Turn into the prepared tin.
|
||
|
|
||
|
Bake in the cetnre of the over for about 1 1/2 hours, or until a skewer comes
|
||
|
out clean. Ten minutes before the end of baking, sprinkle with 1 tablespoon of
|
||
|
demerara sugar.
