# Mulled plums (sous vide) ### Ingredients * plums, halved and stoned * 100 milliliters Brandy, flamed * 800 milliliters Mulled wine ### Directions Combine brandy and mulled wine. Place the plums with a little of the liquid in bags and vacuum seal on medium (100). Cook for 15-20 minutes, or until plums are tender, in a water bath at 75C. Drain off liquid and return to a pan.
