# 1970's Chicken Curry 1970's style chicken curry flavoured with apple, sultanas, and toasted almonds. Cooked by Matt Tebutt on Saturday Kitchen in July 2021. ![Chicken Curry](chickencurry1970.jpg) ### Ingredients * 30 g unsalted butter * 1 onion, finely chopped * 1 apple, peeled and finely chopped * 1 tbsp medium curry powder * 1 tbsp plain flour * 350 ml chicken stock * 1/2 leftover roast chicken, torn into pieces * splash double cream * squeeze lemon juice * 2 tbsp sultanas * 2 tbsp flaked almonds, lightly toasted * salt and black pepper to taste * freshly cooked basmati rice, to serve ### Directions Melt the butter and cook the onion and apple until soft. Add the curry powder, cook for a minute, then stir in the flour. Add the stock and bring to a simmer, stirring until the sauce has thickened. Tear up the chicken into bite-sized pieces and add to the sauce. Cook for 2-3 minutes, until warmed through. Add the lemon juice and double cream, taste and season with salt and black pepper.
