# Langoustine Oil ### Ingredients * Langoustine heads and tails, brains removed * 0.5 pieces large onion, roughly chopped * 2 pieces carrots, peeled * 2 pieces carrots, roughly chopped * leek tops, roughly chopped * 2 pieces star anise * coriander seeds * tomato purée * olive oil ### Directions Combine shells, vegetables and spices with a little olive oil. Roast until coloured and sweet smelling. Mix in tomato purée and roast for another 2-3 minutes. Add more olive oil and leave to infuse overnight at room temperature.
