# Bitter Chocolate Sorbet Recipe yields 8 servings ### Ingredients * 250 milliliters milk * 250 milliliters cold water * 150 grams caster sugar * 50 milliliters glucose syrup * 200 grams dark chocolate ### Directions Put the milk, water, sugar and glucose syrup on the heat, stirring until dissolved, then bring to a boil. Remove from the heat and add the chocolate, stirring until smooth. Return to the heat, bring back to the boil, then strain through a fine sieve and cool until warm and still runny.
