# Garam masala ### Ingredients * 1.5 teaspoons coriander seeds * 2 teaspoons cumin seeds * 1 teaspoons fennel seeds * 1.25 teaspoons black peppercorns * 5 centimetres cinnamon stick * 6 pieces cloves * 5 pieces cardamon pods, seeds from * 0.25 teaspoons fenugreek seeds ### Directions Heat the spices in a dry heavy frying pan over a low heat. shaking the pan from time to time, until they are lightly roasted.
