# Eliza Acton's Wine Sauce
### Ingredients
* 0.5 lemon Lemon zest, thinly pared
* 45 grams sugar
* 150 milliliters water
* 30 grams butter
* 0.5 teaspoons flour
* 225 milliliters sherry
* 225 milliliters Madeira
* 225 milliliters white wine
### Directions
Simmer the lemon zest and sugar in the water for 15 minutes. Mash together the butter and flour, add to the strained lemon water, and cook over a gentle heat until it thickens. Stir in the wine, reheat to just below boiling point and serve immediately.
