# Italian Meringue
### Ingredients
* 80 milliliters water
* 360 grams sugar
* 30 milliliters glucose syrup
* 6 pieces egg whites
### Directions
Heat water, sugar and glucose syrup to 121C.
Whisk eggs to stiff peaks. Slowly pour in hot syrup while whisking.
Keep whisking until mixture has cooled completely.
