# Garibaldi
### Ingredients
* 100 grams butter, at room temperature
* 100 grams icing sugar
* 100 grams egg whites
* 100 grams plain flour, sifted
* 200 grams currants
### Directions
Cream butter and sugar until light and fluffy. Beat in the egg whites. Stir in flour then currants.
Bake at 185°C for 6-8 minutes, until set and light brown in colour.
